Also known as Shrove Tuesday, it happens the day before Ash Wednesday which sees the beginning of Lent, for Christians this is the season when Jesus Christ withdrew into the perilous desert for 40 days. (Aim to make the batter a few hours ahead of time and leave it to set in your fridge) By virtue of this biblical significance, Lent is traditionally observed as a time of abstinence where people will give up a treat for that period, hence why in advance of this disciplined time we luxuriate in the indulgence of Pancake Day first. Pancake Day, or Shrove Tuesday, is observed by followers of the Christian faith all around the world and it marks the last day before Lent (Ash Wednesday) but it is celebrated even by those outside of Christianity.

Add 1-2 tablespoons of melted butter to the batter, stir through to combine. Let it rest in the fridge for at last 15 minutes so any bubbles of dry ingredients has time to blend in. Ensure to have the pan hot enough. Add a pinch of salt to elevate your batter. Add a ladle-full of the batter to the hot pan and move from side to side until it evenly covers the surface. Or eat with blueberries and strawberries. Reduce the heat and cook for about a minute each side or until the batter begins to take a nice golden colour. Check it before you flip it - use a spatula to see if it comes free and if it does, you can flip it then. For a delicious savoury option, add a few teaspoons of fresh pesto to the batter. Whisk the batter fully until it is of the right consistency. Melt a tablespoon or two of butter into the batter to ensure it comes smoothly off the pan.
