Take me back to Mumbai's coconut-flavoured Pancake Tuesday (SBS)

The Catholic community in Mumbai makes these coconut-filled pancakes on Shrove Tuesday. By. Alison Rodericks. 17 Feb 2023 - 8:46 PM ...

- To assemble the coconut pancakes, heat a 20 cm non-stick frying pan on low heat for a couple of minutes. Easy and quick to make, the pancake is great as an appetiser or side dish in a bigger banquet. - Remove the lid and let the crepes cook for another minute. - Pour ¼ cup batter into the frying pan and swirl to coat the base. When that pancake craving hits, but the will to make a stack of individual pancakes isn't quite there, try this novel giant pancake. Tummy rumbling, I'd pop into the kitchen where my curiosity (and belly) would be rewarded with a single delicious pancake – a "taste test", if you will, before I was packed off to school. A mountain of fluffy white grated coconut would rise higher and higher, ready for the week ahead. With a firm whack of his koita (chopper), Ramzan would crack open the hard brown shell in half, deftly catching the sweet coconut water in a glass for me to drink. I'd watch mesmerised as they rhythmically ran the inside of this coconut against the razor-sharp edge of a morli (coconut scraper). And the best way to do this was to make pancakes, of course. This filling is spooned onto the crepe, and then rolled up like a spring roll or a mango pancake. The focus on pancakes is believed to have arisen from the need to finish the fat, eggs and milk in the home before Lent began.

Shrove Tuesday is this week — which means tomorrow is pancake ... (ABC News)

Tuesday marks the beginning of Easter celebrations for followers of the Christian faith. It's also an excuse to fire up the fry pan.

Followers saw it as a day to use up all their fats and eggs, with pancakes being a good way to use them up — so the pancake-eating is more of a cultural tradition. It's a multi-day religious event where Christians retell the story of the crucifixion and resurrection of Jesus. Because the restrictions begin on Ash Wednesday, the day before is seen as the last day of merriment and excess. It's the day before followers of the Christian faith observe Lent, which is the period before Easter. Here's a basic breakdown of the tradition and the religious festivities behind it. That might have something to do with a day some followers of the Christian faith refer to as Shrove Tuesday.

The home made pancakes were more hassle, and if you're wanting home made pancakes, they will require some effort. The costs for the mix was as follows; 4p for 100g flour, 34p for 300ml of milk and 52p for two large eggs. But there was something satisfying about making the pancakes from scratch, a feeling you didn't get with the pre-made mix. The pancake initially cooked well, but was a hassle to flip. To make the comparison fair, both sets of pancakes will be finished with a simple lemon juice and sugar dressing. With the bottle prepared, we poured the mix into a pan of hot oil and let the cooking commence.

Pancake Tuesday Ireland 2022 recipe: here is the secret to creating ... (Independent.ie)

In his book Gastrophysics, The New Science of Eating (2017), Spence explains how the shape and colour of the plate on which you serve the pancake can influence how it is perceived. Firstly, in order to produce perfectly golden-brown pancakes, the pan needs to be evenly heated across its entire surface, and secondly, the fat used also needs to be heated and distributed evenly across the pan, a process known as seasoning. Even if the first pancake doesn’t turn out brilliantly, never mind, because the second is all but guaranteed to be better. The batter needs to be cooked in a container — a pan — to give it form. (This, of course, may be to your liking as it guarantees enhanced crispness, but it is not strictly correct.) To get an even, golden brown you want to use just enough butter or seasoning to prevent the pancake from sticking, which is why it’s a good idea to wipe the pan with kitchen roll after adding and melting additional butter between pancakes. The delicacy of traditional crepes — defined as thin unleavened pancakes cooked on a shallow pan and folded over a filling, whether simple lemon and sugar, chocolate and hazelnut spread, or more complex savoury combinations — comes from their thinness.

'I compared prices of Pancake Day ingredients at Asda, Aldi ... (Manchester Evening News)

The Manchester Evening News has taken a look at the price of those five ingredients at Asda, Tesco, Sainsbury's, Morrisons, Aldi, M&S and Waitrose, and found a ...

Most of Tesco’s ingredients price matched Aldi, with both flours costing 58p, milk coming in at £1.30, sugar 95p and lemons 55p. Butter, like at most of the other supermarkets, costs £1.99, but five lemons cost 69p. Semi-skimmed milk is consistently priced at £1.30m but 1kg of sugar comes in at £1.19. It means you could potentially save money in buying smaller quantities of flour, but even then the ingredients would still cost £8.35, with eggs coming in at £1.83, milk at £1.30, and butter at £2.15. This leaves Tesco, Aldi and Sainsbury’s battling for the cheapest supermarket title, but it’s Sainsbury’s who came in third, with their Shrove Tuesday shopping list costing £6.91. Meanwhile, 1kg of sugar costs 95p, while lemons are £1.70 for 4, and butter costs £2 for 250g. Their eggs are cheaper too, at £1.25, but two pints of milk costs £1.35 - 5p more than M&S. M&S sugar cost £1 for 1kg, while their five pack of lemons cost £1.50. At Asda, shoppers can pick up everything they need for pancake day for £7.01. At Morrisons, the ingredients would set you back £7.68, based on buying three 55p 500g flours. Some only had 500g bags, so we’ve multiplied the price by three to get the correct volume of flour at those particular stores. We also priced up pre-packed lemons, of which there are typically four or five in a pack.
